thai tofu veggie wrap

so, i am learning that not all my recipes are healthy. this one is ok. definitely something you'd want to eat as your large meal of the day. i just made it and it was very tasty. i can't believe this is my first foray into cooking tofu!


thai tofu veggie wrap - serves 1
(from "ok, so now you're a vegetarian")
4 t. olive oil
1/2 c. diced carrot
1/3 c. diced onion (i omitted this and increased the carrot)
1/2 c. diced snow peas (i used the sugar peas i grew in my garden...the few that grew)
2 1/2 t soy sauce
1/2 c extra firm tofu, cut into 1/2 inch cubes
2 T peanut sauce
2 T chopped peanuts (optional)
2 T chopped fresh cilantro (optional)
1 10- or 11-inch whole wheat tortilla

In medium skillet over medium-low heat, heat 2 t. of the olive oil. Add the vegetables and 1 t of the soy sauce. Saute about 5 minutes (keep them crisp). Remove from heat and transfer to a bowl.

Wipe the skillet clean w/ paper towel and return it to the heat. Add the remaining 2 t. olive oil and heat over medium heat. Add the tofu and remaining 1 1/2 t. soy sauce. Cook tofu until heated evenly through, about 5 minutes. Turn to cook all sides evenly.

Add the vegetables to the skillet and mix. Cook for 1 minute. Remove from the heat and gently fold in the peanut sauce, peanuts, and cilantro. Spread the mixture on the tortilla and fold into a wrap.
